    个人简介:

  冯凤琴,女,1964年10月生,博士研究生/工学博士,教授。浙江省食品添加剂协会专家委员会副主任委员,浙江省“151”第二层次人才,杭州市“131”第一层次人才,浙江省食品学会理事,浙江省生物工程学会理事,浙江省食品添加剂和配料协会理事。菲律宾亚星国际正网兼职硕士生导师。

  研究方向:

  新型食品添加剂及功能配料,食品生物技术。主要包括:

  1.功能蛋白方向:以动植物蛋白为原料通过生物技术制备生物活性肽,涉及的功能包括促进矿物质吸收、提高免疫、降低过敏、降“三高”、抗疲劳、抗氧化、抗衰老、改善肠道等。除了研究功能肽的制备工艺、结构、功能特性外,还对其构效关系、工业化分离精制技术进行系统研究,取得了国内领先的技术成果。

  2.功能脂类研究:(1)以植物油为原料,制备以1,3二油酸-2-棕榈酸甘油三酯(OPO)为主要成分的母乳脂肪替代油脂,研究内容涉及OPO的制备、OPO检测技术、应用技术及产品开发,还对制备OPO的关键酶(专一性及非专一性脂肪酶)的生产及应用技术进行研究。(2)在国内率先研究开发了兼具广谱抑菌功能和优良乳化性能的安全高效食品添加剂月桂酸单甘油酯(GML),对高纯度GML的生产技术及GML在不同体系中的应用进行了系统研究;(3)在构效关系研究基础上,通过对中链脂肪酸的分子改性,筛选综合性能优越,符合食品应用要求的新型中链脂肪酸衍生物类乳化防腐剂,并进行产业化开发和应用。
